13 Egg Substitutes for Cooking and Baking

The majority of standard recipes seem to call for eggs, but are they needed?

Nope!!!

Here are cooking and baking egg substitutes if you are practicing a plant-based diet, can’t eat eggs, or simply don’t like them.  Eggs serve 3 basic functions in cooking and each of these functions has a workable plant-based replacement.

Egg function in most recipes is for:  1) binding;  2) leavening; and  3) moisture.  Because of these different purposes there are different substitutes.  Because there are multiple substitutes you have more flexibility in mixing, matching and creating your favorite recipe replacements based on function and flavor wanted.

Below is a list of Egg substitutes, best uses, and related recipes to try. Please share your results.

For recipes calling for 3 or less eggs:

1 EGG for Replacement Directions

Moisture:

1.  Pureed Fruits – sweet flavor   egg-Applesauce

  • ½ cup mashed bananas
  • ¼ cup applesauce (unsweetened)

Sample Recipe: Blueberry Bundt Cake

2.  Pureed Vegetables – savory flavor

  • ¼ cup pumpkin (winter squash)

Sample Recipe: Quinoa Muffins

  • ¼ cup carrot or beet for moisture and color

3.  Tomato Paste – also for stickiness

Sample Recipe: Umami Almond, Quinoa and Sun-Dried Tomato Burgers

 

Leavening (Rise):

4.  Soda Water – ½ can (8 ounces) – great for box cake mixescupcakes

5.  Vinegar & Baking soda – mix 1 Tablespoon Apple Cider Vinegar with 1 teaspoon baking soda – for breads and cakes

Sample Recipe: Strawberry Cupcakes   or Vegan Irish Soda Bread  

 

Binding:

6.  Agar Agar Powder (or flakes) – 1 Tablespoon with 1 Tablespoon water as a gelatin for custards, puddings and sauces.

Sample Recipe: Caramel Flan

7.  Chia Seeds   – 1 Tablespoon chia seeds with 1/3 cup water for cakes and cookies.

Sample Recipe: Oatmeal Chia Seed Cookies

8.  Chickpea (Garbanzo Bean) Flour   – ¼ cup flour with ¼ cup water (or plant based milk).

9.  Flax Seeds, Ground  – 1 Tablespoon ground flaxseed with 3 Tablespoons water, let sit 5 minutes

Sample Recipe: Whole-Grain Corn Muffins

10.  Aquafaba (chickpea gel) – great for egg white replacement

Sample Recipe: Vanilla Meringues or Baked Alaska

 

For recipes calling for more than 3 eggs:

Tofu BUT  …. the right tofu is essential.

egg-tofu11.  Soft Silken Tofu  – versatile for both sweet and savory dishes. Use ¼ cup tofu per egg in the recipe.

Sample Recipe: Homemade Mayo

12.  Firm Silken Tofu – works well for custards, quiches, pies and omelets.

Sample Recipe: Basil Pesto or Vegan Chocolate Mousse.

13.  Extra Firm Silken Tofu  – is good for eggless scrambles.

Sample Recipe: Basic Scrambled Tofu (should omit oil)
